What are some good white sauces or similar sauces for kidney beans?...
and especially easy to make.

A basic roux (flour, butter and milk or cream or half and half)
flavoured with garlic or onions or sage or all three. Or any other herbs
or spices you might like. Adding some grated cheese to it can be nice,
nutmeg and/or all spice in any milk or dairy dish. Or cook the beans
Italian fashion with just enough water to be completely absorbed by the
beans in the cooking process then puree about half the beans and add
some cream and flavourings.

Also a chicken "veloute' sauce, béchamel sauce, bernaise sauce a
"mornay sauce" is just a béchamel with the addition of butter and
parmesan cheese. A "sauce smitane" (creme aigre) is a sour cream sauce.

Sour cream sauce

2 tablespoons finely chopped onion

1 oz butter

1/2 pint dry white wine

1 pint sour cream

juice of 1/2 lemon

Lightly brown the onion in the butter., Add the wine and almost
completely reduce. Add the sour cream and allow to boil for a few
minutes, strain if desired and finish with the lemon juice.
