Poor people use iron pans , rich people want more even
heating from a pan ,
they use cheap 'teflon" aluminum pans .
S.S. is also uneven heat .

I've just acquired a black iron omelette pan with limited instructions
on how to season it for first use.


The web offers plenty of advice about seasoning cast iron pans but I
can't find anything about black iron - which is basically steel.


Any suggestions? (Even suggestions of the correct NG)
