I don't have an actual recipe. Daughter and I are allergic to more things
than eggs and butter. Wheat in her case. You can buy an egg replacer from
Ener-G. It can be used in most recipes, but I find sometimes the finished
result has a different texture. If it's a fruit type cake, I find the use
of a mix of ground flax and water works better. One recipe I make uses an
apple and a pear, chopped as well as some raisins. I won't give you that
recipe because it calls for rice flour and things you wouldn't necessarily
need to have. Just look for any spice type cake with fruit in it and that
would work. Or carrot cake.

You can use coconut oil or Spectrum Palm Shortening in place of oil. I've
even used olive oil in chocolate cake and it tasted fine.

I was looking for recipes and here is one that would work with either the
egg substitute or the flax meal. It only uses one egg.

You would of course bake it for less time when making cupcakes.

Just occurred to me - why do you want a recipe like that?
What's wrong with eggs and butter? it's the flour and sugar
that I have problems with.

Nope - mine uses extra eggs since I stopped putting flour in them for
diabetes control... you sound like you're trying to avoid cholesterol
problems? - you might want to google for websites specifically aimed
at that?

I presumed it was food allergies. But I've been known to be wrong.

you can type in "diabetic...", "low carb...", or "no egg/sugar..."

Thanks everybody. It was (is) a problem of food alergies for my grandson.
I guess this was not the most appropriate of groups but felt it was worth a
try.
