Well I'm off work thursday thru sunday as in 10 days on 4 days off. And it
is forecasted on thursday to be -10 (good and warm enough). So I am going
to smoke a boneless pork butt roast. I have some rubb leftover from last
fall which was rather good ... cocoa, brown sugar, chipotle powder, kosher
salt, oregano, summer savory, paprika, black pepper, onion powder, cinnamon
and garlic powder. So today the roast gets put in the fridge to defrost and
tommorrow it gets rubbed.
I'm going to use apple juice and rum mix as a mop and use a spray bottle to
apply. And make that Orange BBQ sauce I posted, to use as a finishing
sauce.
Using hickory chips for smoke and will go till 160F interior temp as I
don't like it to fall apart too easily (not making pulled pork).
I'll keep the gas smoker the closest to 250F I can. This will be my first
attempt at winter smoking.
