Ingredients:
Half-inch thick slices of eggplant sliced the long way (curing with salt
is optional)
olive oil
crushed or powdered garlic
Rosemary
Basil
Oregano
White wine
Salt
Pepper
Directions:
Make a marinade using all the ingredients but the eggplant.
Brush both sides of eggplant slices and put on grill. I use a George
Foreman Grill which works very well for this.
Grill until tender. Apply marinade at least 3 times during cooking.
