In my neck of the woods, we call that an "Open Faced Sandwich".

I visited my aunt today for lunch.
She served me a sandwich.
Instead of two slices of bread, the upper slice was replaced with a large leaf of lettuce.
It tasted pretty good and I reduced my carb intake by 15 grams.

has just enough whole wheat flour to call it whole wheat, sometimes
along with sugar. I once got some by mistake which had molasses in it.
I read the label carefully and look for 100% stone ground whole wheat flour.

A small amount of sugar is necessary for the yeast to activate in a lot of
cases. I found a low carb, whole grain bread with 3gr. per slice. Granted
it isn't an oven fresh French baguette, but I can get some decent toast out
of it. Really helps at breakfast time.

For bread that's low in sugar, it should be one of the last ingredients
listed. Ingredients are listed in order of amount used. High fructose corn
syrup is it's third ingredient so that's pretty high. I know that the bread
I eat has it a one of the last ingredients. It's whole grain wheat, wheat
gluten, with any sweetner listed toward the end. It's Manitowoc Natural
Ovens Low Carb bread. There's two varieties. One has sunflower seeds in it
and makes great toast. The other one is great for sandwiches. Even their
regular bread is only 7 to 9 grams of carb. You can find it on line. I
don't know the URL but it's under Natural Ovens. It's available for order
on-line in the US. It's expensive, but to me, it's worth it. I figure when
I have to be so careful with what I eat, I'm going to make sure it's the
best I can buy.

The sugars listed on bread ingredients are almost never
present in the finished product. During the rising stage,
the yeast ferments almost all available sugar to alcohol.
This alcohol is evaporated during the baking stage. Almost
all the carbs in bread comes from flour.

The bad news it is has at least 4 simple carb ingredients
high fructose corn syrup
honey
molasses
raisin juice concentrate
All are basically sweeteners.
The high fructose corn syrup may or may not show up in your blood tests.
As I understand it fructose is metabolized differently than glucose.

I found the article on-line. This problem was detected in Feb. 2002. I am
a class A skeptic, but in this case I tend to believe the company. They
have to good of a reputation in the state to risk major problems.

Better yet, if you buy the light bread.... (Pepperidge farm makes a lite
multi grain that is just delicious) you can have your whole sandwich using
two slices for the same carbs and calories of one slice of regular bread.

I'm now eating whole wheat bread. I like white bread better, but this
stuff isn't TOO bad. I tried 3 brands before I found one that I like.
the worst one was Sara Lee, IIRC. The one in the fridge now is Country
Farms. It has a more balanced flavor and it's softer and fresher than
the other 2 brands I tried.
