3 hard boiled eggs cooled and peeled
1 very small ripe avocado
1 tablespoon chopped sweet onion -- more or less to taste
salt and pepper to taste.
In a medium bowl, chop the eggs. In a small bowl mash the avocado and
add to the eggs. Add the onion, salt and pepper and mix well.
Serve about a half a cup rolled in a low carb tortilla or on a bed of
lettuce with sliced tomato on the side.
Some people like finely chopped celery in their egg salad, too.
