Tomatoes are good and fresh right now so I've been working with them
for meals. Here's a nice, light treat.

Tomatoes Stuffed with Goat Cheese

A quick and easy appetizer or party snack. It's low-carb and
diabetic-friendly as well.

-= Ingredients =-
1/2 pound Small tomatoes ; - about 1 inch each.
3 ounces goat cheese
1 ounce Mayonnaise
1 tablespoon herbs, mixed ; - pick your favorite (I used Mrs Dash)
1 clove garlic ; - crushed

-= Instructions =-
Wash and stem the tomatoes if needed. Mix cheese, mayo, herbs, and
garlic until smooth and soft. For a short cut buy goat cheese with
garlic and herbs mixed in.

With a thin paring knife cut down into each tomato and remove the
seeded portions, forming a small well. Place the cheese mixture in a
piping bag with a star tip and gently fill each tomato with a dollop
of herbed cheese. Keep going until the cheese and/or tomatoes are used
up. Any remaining portions are considered the "cook's share" and are
fair game for snacking.

Arrange on lettuce leaves or other garnish. There are about grape 24
tomatoes in 1/2 a pound and three stuffed ones is a serving.

Each (3 stuffed tomatoes) serving contains an estimated:
Cals: 50, FatCals: 40, TotFat: 5g
Chol: 10mg, Na: 86mg, K: 97mg
TotCarbs: 3g, Fiber: 2g, Sugars: 0g
NetCarbs: 2g, Protein: 3g
