I invented this to put on the sauerkraut cakes.
It's lots better than applesauce from a jar and didn't spike me at
all.

Tart Apple Compote
Try this on pork, or savory potato pancakes. It's also diabetic
friendly.

1 large Granny Smith Apple ; - chopped fine or shredded
1 teaspoon Splenda ; -- to taste
1 tablespoon Lemon juice ; -- to taste
1 dash Salt
1/4 teaspoon Cinnamon ; - to taste
2 tablespoons Water ; -- if needed

Mix ingredient (except water) in a small saucepan. Cook over low heat
until apples are very soft. Add water as needed to make a thick sauce
consistency.
I served this on fried sauerkraut cakes with some smoked pork loin. It
was a big hit.
