I've been putting together some recipes for a young friend that has
decided to drastically reduce her carb intake. In combing through my
recipe files, I discovered I have quite a few diabetes-friendly recipes,
along with far too many that aren't
Saag
2 pounds spinach
1 ounce ghee (use melted butter if necessary)
1/2 teaspoon salt
1 teaspoon ground ginger
pinch sugar (or Splenda)
Wash spinach and shred it very fine. Put in a pan with the ghee and less
than 2 tablespoons water, the salt, ginger and sugar. Cover an leave on
high for 2 minutes, then on medium heat until soft and all the moisture
has evaporated (25 to 30 minutes). Stir once or twice during this
period. Uncover, mix well and leave uncovered on low heat for 3 minutes
before serving
Makes 4 servings. Per serving: 114 Cal, 7.9 g total fat, 6.6 g protein,
8.3g CHO, 6.1g fiber.
1 1/2 vegetable, 1 1/2 fat.
