Hi
I buy pork from a local farmer and have always enjoyed his products.
My latest purchase of filet, belly and sausages have all tasted much
more strongly than previously - all the meat tasted almost wild. The
filets were very dark colored.
Any suggestions why this might be so - could it be a boar or an old
animal? Or just a different breed?
I will talk to the farmer but I want to get some idea of what might be
the cause.
