Ingredients:

2 tbls Olive oil
2 tsp Lemon juice
Salt and pepper
100 g Mushrooms
225 g Water chestnuts
4 item Spring onion, sliced
175 g Chinese cabbage
1 tsp Sesame oil
2 tsp Chives, snipped
1 tsp Sesame seeds, toasted
Chinese leaf salad

Serves 4

1. Slice the mushrooms. Drain and slice the tinned water chestnuts.
Put the mushrooms, water chestnuts, spring onions and small Chinese
leaves from the heart in a large salad bowl and toss gently to mix.

2. To make the dressing: beat the olive oil, sesame oil, lemon juice,
chives, salt and pepper together until well blended. Pour over the
salad and toss well to coat.

Advice: The tangy lemon sauce would be a tasty accompaniment to prawns
or chicken. Add a little chopped, fresh chilli for a more fiery
flavour.

3. Sprinkle with the sesame seeds and serve immediately.
