I just found a Cusinart Ice Cream Maker pushed way in back in the cabinets
under my kitchen counter. Used once. I brought it out to daylight and got a
lota :."Oooh yea, I remember that". Can I make anything suitable for a T2
with it?

Might be able to do ice cream made with Splenda. Probably could find a
recepie on line somewhere.

One of the problems with ice cream is it really needs sugar to soften it,
and substitutes don't work as well.

When I got diagnosed, one of the things I bought was a book of low carb ice
cream recipes. I haven't had a chance to try any of them, so they might not
work out, but here's a basic vanilla one:

1 package unflavored Knox gelatin
3/4 cup hot water
1 1/4 teaspoon real vanilla extract (I'd probably use more than this)
1 3/4 cup heavy whipping cream
1/2 cup Splenda
1/2 teaspoon liquid sweetener Sweet N Low (she mixes sweeteners to reduce
aftertaste)
1/4 cup egg white protein

Sprinkle gelatin over hot water and let it set for a minute. Stir until
gelatin is dissolved. With a mixer, blender, or food processor, combine
extract, whipped cream, both sweeteners, egg protein and gelatin/water
mixture. Mix well and chill for at least half an hour. Stir and pour into
your ice cream maker, following manufacturer's directions for making ice
cream. Makes one quart.

Entire recipe has 22 carbs
(I'd double check that against the packages of stuff I was using in the
recipe)
