no..... teeny tiny bites of cheese thru the dip..... yummy flavour sensation

think of bits of apple and onion in a salad!.... yum

I'm going to try the ersatz guac.
I'm thinking when you say chopped cheddar you mean grated?

I've had a few requests for my diet and cooking plan, which does not
include recipes.
Just for interest, I'll post one every so often.
Bon appetit

Alan's Recipes

Avocado Dip

1 ripe avocado
¼ cup chopped celery
¼ cup chopped onion
¼ cup chopped red capsicum (bell pepper)
1 chopped hot chili pepper (to your taste, or chili flakes)
½ minced clove of garlic
30g chopped cheddar cheese
30g light philadelphia or ricotta or cottage cheese
2 teaspoons grated parmesan
a squeeze of lemon or lime juice
1/2 tsp minced/grated ginger (optional)
salt and pepper to taste

All ingredients are extremely approximate and dependant on what's in
the fridge.

Peel avocado, mix all ingredients.
Adjust dryness with olive or peanut oil if necessary until a smooth
paste is obtained.

If using a food processor, add the solid vegetable ingredients last
and process briefly to retain some texture.

Serve with slices of carrot, celery or similar for dipping. Low-fat
biscuits may be OK depending on your carb requirements.

carbs, fat etc - not the faintest idea (low, and depends how much you
have). Check your own BG at one and two hours, mine is usually good
after this.

Yeah, I know I shouldn't talk to myself, but here's a final one for
this week:

Alan's Recipes

Chili Crab

Sauce:
½ cup water
½ cup ketchup (try to get lo-sugar) or 1/4 cup tomato paste
2 tbsp soy sauce
1 tsp chili flakes or 1 small chopped chili (adjust to taste)
1 tbsp vinegar
1 tbsp splenda

Cooking:

About 1 kg of live crab (2-3 lbs) or half that weight dressed.
1 tbsp of peanut or olive oil
2 or 3 cloves of garlic, minced
grated ginger to taste
1 chopped hot chili to taste
1 sliced medium onion
1 tsp cornflour (cornstarch)
¼ cup water


Pre-cook crab in boiling water (did you ever see that cartoon of the
two giant lobsters by the cooking tureen, throwing a guy and his girl
into the boiling water - caption: "that high-pitched noise is just the
air escaping!")

Divide crab into appropriate portions, cracking legs and claws with
the back of a heavy knife. Set aside.

Mix sauce ingredients, set aside.

Heat oil in wok or heavy pan and stir-fry onion and chili. Add ginger
and garlic, fry briefly, add crab.

Stir-fry for two minutes then add sauce and stir while heating for
another five minutes or until crab is heated through.

Mix cornflour and water and add to the pan. Cook and stir until the
sauce is set and ready to serve.

Serve as is or with basmati rice if carbs are OK. Supply damp towels
for diners - they will need them. This is not a dish to serve to a
food snob who doesn't use their fingers.
Once again - carbs, fat, etc - low, but check your own meters. I can
cook them, but I'm no good at analyzing them.

Absolutely right. I only use a processor for this when I'm in a hurry,
because I like the textural variations. But I like to vary everything
just for a change.
Hadn't thought of apple. Hmmm.......

Thanks for this one. I just happen to have 2 avocado trees and an oversupply
of them right now. Lovely recipe.

That one I knew (California being a guacomole state - besides being a crazy,
mixed up state - full of fruits and nuts).
But I usually use lemons. (Have one of those, too.)
Picture a pair of poor parents (teachers salary and 6 kids) finding a house
they can barely afford back in 1967. He's from Manhatten Island (as much in
the middle of New York City as you can get) and she's from northern Minnesota
where crab apples are the only fruit tree that can survive - usually.
House came with a big yard. First thing we did was start to plant TREES.
Oranges, lemons, avocados, pears, plums, apples, peaches - some of them
survived and
are 30 years old now. Now he's gone, the kids are gone, and I've got lots of
fruit, some of which (the oranges) are limited by diabetes. Oh well.

Hi Nan
I should have mentioned: almost all of the ingredients are optional
but don't leave out the citrus squeeze. That stops the dip from
discolouring in the fridge.

Hi Nan

I was a little rushed earlier. Bit sad over here - watching a State
funeral for Slim Dusty on TV. You had Johnny Cash (who I also liked)
and we had Slim. He didn't go from diabetes but he epitomised the
Aussie spirit. Anyway...

I wish I had known you when I was over there in March. We stayed with
friends I met on the CLL list in Glendora, Huntington Beach and San
Fernando. Amazing hospitality from you Californians and others in the
US; as soon as I mentioned my up-coming trip on the list we got offers
to stay. Also from St Louis, Atlanta, Virginia and NYC. We rented a
car and drove from LA to San Francisco via the coast - Big Sur etc.
Maybe it's just as well you didn't meet me trying to learn to drive on
the wrong side of the road.

Beautiful country, but I couldn't believe the LA smog. First sight out
of the window of the 747 was the snow on the Sierras above a blanket
of smog.

Anyway, getting way OT. Hope you like the dip (alright, I'll pretend
it's guacamole for you furriners).
