low carb vegan

Jon...

It's tough, but it ain't impossible.

Now... vegan is no animal products whatsoever... no fish, no dairy, no
eggs, no cheese.

You'll have to get your protein from soy and nuts. Traditional
vegetarian cookbooks will be heavy on the grains and beans and wheat
products, but they may have some recipes that would work. You might
also want to check out the "Glycemic Index" which can point you toward
the lowest glycemic beans and legumes (Chana Dal is the lowest, but
there are others at the "bottom".)

I did a search for you on Google (you should give it a try, lots of info
there!)...

I put in "low carb vegan", and came up with the following links, mostly
recipes (there were more, but these seemed most promising).

Good vegan recipes are good for anybody else as a side dish, so I'll try

Well... since you're here on alt.food.diabetic, I'll assume you're a
diabetic.

Are you T1 or T2?

What does your meter tell you when you eat beans?

As for SLOW or LOW... to me, they say something different. Low would
tell me that the carb count for a serving is small. Slow would tell me
that it may be lower on the glycemic index and therefore despite it's
carb count, it doesn't raise my blood glucose level as much as it "should".

Do a search for Glycemic Index, you may find somethings of interest.

Would it be correct to say that SLOW carbo is a reasonable (or partial)
