Christmas Eve we had about 20-30 friends and family members over
for dinner and to exchange holiday cheer and presents. I cooked
a mostly traditional buffet which seemed not to set me off at
all, Heres what I made;
Roast Tur-duk-en
Baked ham
Mixed baby greens with cranberry vinaigrette dressing
Oyster/artichoke/eggplant dressing
Baked acorn squash
Fresh cranberry fruit mold
Whipped Louisiana yams
Giblet gravy
Roasted green beans
Pumpkin pie, with whipped cream
The GI of this meal was pretty low. I guess if I had pigged out
I would have spiked but I ate pretty much what I wanted over a
period of abut 3 hours. My maximum BG was 123.
BTW a few years ago I discovered that Retsina goes very well
with roast turkey and is now a standard part of our holiday menu.
