Anyone here seen these?

I don't think they are available where I am at, but they are easy enough to
make at home if you have a long handled teaspoon to hollow out the cucumber.
You can fill them with whatever you like. I've made hummus cups before,
hollowing out large chunks of cucumbers, but have yet to try filling a whole
one.

Stuffing a cucumber then slicing it into about 1 inch thick rounds
(sorry, I don't do metric), makes lovely canapes. I've stuffed cukes
with cream cheese mixed with smoked salmon, cream cheese mixed with
olives, salmon salad, chicken salad, etc. They look so pretty on a tray
and don't have the carbs that cracker based canapes do.

Theirs probably is. But you could make your own. The point was to have a
portable food.

But it reminds me of a poster the nurse used to have up over her desk,
showing a polar bear titled "Try telling her vegetables aren't
cool!"... it disappeared after my then 8yo pointed out, rather
witheringly, that polar bears are carnivorous...

The ones I saw at a party were thinner than that. They had a thin smear of
cream cheese to keep the carrot stuck and then a carrot stuck inside the
hollowed out part.

Not for me. I don't particularly like them but daughter does and she can't
eat wheat so this works well for us.

I stuff a green pepper wih flavored cottage cheese(carroway or cumin
seeds, finely chopped onion, etc adnwrap it well so the filling doesn't
fall out. You could also just use tuna or egg salad, etc. if you like.

Actually, the idea looks good for occasional use and could
be a useful take-in-the-car lunch when SWMBO takes a
sandwich. I might try it by stuffing a small cucumber with
my "stir-fry and salad" mix with some home-made dressing.

My portable food is a container of cut up raw veggies (thick slabs of
Lebanese cuke cut diagonally, celery, carrot strips, red pepper strips,
sliced mushrooms) and another container with hummus, guacamole, tsatsziki
etc. With a container of unsalted mixed nuts (walnut, macadamia, brazil,
hazelnut, almond and cashew) and a few bottles of water, I am set Wink.
Devilled eggs and a tossed salad in the cooler along with a bottle of
home-made vinaigrette, olives and some fruit I can handle and I can be away
all day Wink

They do if there is no mayo or other dressings. That's why I like to have
the cut up raw veggies separate to whatever I am having with them.
