If you can tolerate beans in your diet:
Crockpot Butter or Lima Beans
1 large yellow onion -- chopped
3 cloves garlic -- minced
3 cups butter beans -- or lima; fresh, canned or frozen ( thaw )
28 ounces canned diced tomatoes -- with juices
1/2 cup minced fresh parsley
salt and pepper to taste
1. Sauté the onion in some oil in skillet until softened, then add the
garlic and cook until the garlic is softened.
2. Place the sautéed mixture to a 3 1/2 - 4 quart slow cooker and add the
beans, tomatoes with their liquid. Stir well to combine.
3. Cook on Low for 4 to 6 hours. Season to taste . Just before serving stir
in the parsley.
Yield 4 servings

That actually sounds good. I think I've had that recipe that she posted and
I didn't personally care for it. It sounds like what they call "baked
beans" in PA. I actually like lima beans either plain or tossed in a soup.
Can't remember the last time I had any though because nobody else in the
family likes them. |

I am not a diabetic but my BIL is recently diagnosed type 2,( also hi
cholesterol ) He is on metformin and diet.
He can eat beans and such things /fiber foods in reasonable quantities
without a big sugar surge. He is also a "vegetarian "so perhaps that is why
I am prone to post such recipes.
He eats whole grains and beans in reasonable quantities. ( perhaps 1/2 cup
+ a serving with other stuff. He eats no red meat. He does eat fish/seafood
and low fat cheese and dairy and plenty of other veges. He avoids white
flour products /potatoes/white pasta but does eat small amounts of whole
grain pasta and whole grain bread and sugar free products , desserts and
beverages.
From my understanding with the glycemic index many bean products don't give
quick burst of sugar to the system.
It seems to work for him. His nutritionist and Md satisfied with his
readings.
I am discovering perhaps people on this group probably has very brittle
diabetes.
I only got on this group to get recipes for him. etc. He is a bachelor guy
without computer.
But I am realistic, so I think I will wait and see and not post anymore and
perhaps see what other kind of recipes people post instead that perhaps he
can use. Maybe there is a diabetic vegetarian group hmm???
Better to find out early what people want on groups than to post unwanted

I'm a Type 1 on insulin and I love beans. I usually handle carbs well,
especially things like beans. I could definitely eat this recipe but I'd
portion it out into more than 4 servings, probably more like 6-8 as a side
dish.

We don't seem to get a lot of recipes here. I don't do low carb and my
recipes are mainly vegetarian. I also have food allergies so while I might
occasionally post a recipe, most of what I eat wouldn't appeal to most
people. I tend to get a lot of my recipes at various online places,
including allrecipes.com. They are good to give you a breakdown of carbs
and such. I don't generally use "diabetic" recipes because for some odd
reason they are usually really low in fat, high in carbs and some sort of
weird dessert item. Why do they think we diabetics want lots of desserts?
I don't. I want REAL food.
I appreciate the recipes. That one just didn't appeal to me. |

Most of us are omnivores, but we do have a couple of vegetarians.
